I did a great Knife Sharpening Class at Gerber Knives...
I wanted to Thank You for the class you conducted here at Gerber Corporate Headquarters. The feedback from the organization has been outstanding. In fact, your session was considered one of the most beneficial. I am looking forward to future courses and perhaps we can team-up for an event (grand opening, outdoor show…) . The instruction, hands-on and content was perfect. Please do not hesitate to contact me with any questions or requests.
Kind Regards,

p.s. I'm talking you up every chance I get! So close. So reasonable. SO excellent!

It is such a pleasure to work with someone who takes such obvious pride and pleasure in doing quality work, and who appreciates the value of good tools. It has made me revisit my values, and to not settle for less in my own work life. I was inspired to start making changes at work, for the better.

They're knives! Let them do their work!

You and I both know you have these incredibly dull knives sitting around in your utensil drawer being abused, forgotten, and neglected. You think about having them sharpened, but don't know how to go about it, or think it will be too expensive... Maybe you take a stab at it yourself and it doesn't go as well as you hoped, or you fall prey to the idea that you can pick up some sharpener at Fred Myers and from there, you'll be slicing tomatoes with the best of them. What happens is not so good.
So you bring your knives to me, or if there are special circumstances, I drop by and pick them up. If there are stories connected to them, I want to hear them. If they belonged to your father, I want to know about it. I take them in, I treat them like my own children. I lovingly hone the edge to a mirror polish, I bring out their innate character and I return them to you wrapped up like Christmas presents and sharper than you've ever seen them... and it changes things. You never look at these knives quite the same again. You have respect for them, they feel different in your hand, they slice through bagels like a guillotine, they carve paper thin slices off a tomato that you can see through.
And it was cheap!

Tips for Happy Knives!
- Don't put good knives in the dishwasher. They bang around and get dull. Plus, if they have wood handles, it will ruin them.
- Don't cut anything on ceramic, metal, marble, glass, or tile. Use a wood or plastic cutting board.
- Don't just leave them in a utility drawer, you'll get cut and they'll get dull.
- Once sharp, don't leave them in the sink, particularly in water. That's a place where people often get cut.
- If you put them in a dish drainer, place them point down and don't lean them against metal.
- A "Sharpening Steel" does not really sharpen, it just realigns a bent edge and is a stop gap until the knife can be sharpened.
- Don't use a Sharpening Steel on brittle Japanese knives or ceramic.
- When possible, just wipe your knives down and store them somewhere safe.
- Never use a consumer electric Knife Sharpener, they will butcher your edges.
- Don't whack bones with a thin sharp blade... That's not what they're made for.
- Treat them to a visit with The Patron Saint of Knives once in awhile... They'll love you for it.
